Velveeta Cheesy Spinach and Bacon Dip
I made this quick and tasty treat this weekend to bring over to a friends house for an impromptu barbecue. I've been wanting to make this recipe for a while because it sounded so yummy. The best part about it is that it literally takes 15 minutes to put together. I love making things for parties, but sometimes I just don't feel like spending an hour preparing something. Sometimes you just need something fast! There weren't any complaints, I barely had any left over.
1 pkg. (10 oz.) frozen chopped spinach, thawed, drained
1 lb. (16 oz.) Velveeta, cut into 1/2-inch cubes
4 oz. (1/2 of 8-oz. pkg.) cream cheese
1 can (10 oz.) Rotel Diced Tomatoes & Green Chilies, undrained
8 slices bacon, cooked, crumbled
Microwave all ingredients in microwaveable bowl on High for 5 min. or until cheese is completely melted and mixture is well blended, stirring after 3 min.
Serve with tortilla chips, wheat thins or cut-up fresh vegetables.
