Top Tailgating Recipes


The other day the Penn State page on facebook posted it's top tailgating recipes listed by past and current students. A couple of them caught my eye that I'm definitely adding to my recipe book. I'll probably even make a few for the PSU vs. Indiana game on November 20th at Fed Ex field that I'm going to. Since we're a couple weeks into football season and it's starting to get a little chilly out there I thought I'd share my faves with you to make at your own tailgate. Enjoy!

Six Layer Taco Dip

1st layer - spreadable cream cheese, spread over round plate
2nd layer - hot taco sauce, pour over cream cheese
3rd layer - baby cooked shrimp, sprinkle over sauce
4th layer - shredded sharp or mexican cheese
5th layer - sliced black olives
6th layer - chopped green pepper

Serve with Doritos.
*This sounded delicious, but I feel like it's too heavy a dip for the chips so I might re-vamp this one a bit.

Penn State Blue Velvet Cupcakes

2 1/2 cups white, unbleached flour
1 1/2 cups sugar
1 1/2 tsp. Dutch Process cocoa powder
1 tsp. baking soda
1 cup buttermilk (room temperature)
1 1/2 cup vegetable oil
1 tsp. white vinegar
1 tsp. pure vanilla extract
2 large eggs
1 oz. blue food coloring

Preheat oven to 350. Line 2 12-cup cupcake tins with liners. Sift dry ingredients together in large bowl and set aside. In another large bowl, mix wet ingredients well on medium speed. Slowly add dry ingredients to wet. Mix for approximately 2 minutes, scraping the sides of the bowl as necessary. Fill cupcake pans 2/3 full with batter. Bake for 18-20 minutes or until toothpick comes out clean. Remove cupcakes from oven and cool completely on wire racks.

White-Out Cream Cheese Frosting

1 8 oz. pkg of cream cheese, softened
1 stick (1/2 cup) of unsalted butter, softened (do not melt)
1 tsp. vanilla extract
3 1/2 cups of sifted confectioner's sugar

Blend cream cheese, butter and vanilla together with mixer. Slowly add sifted confectioner's sugar. Blend well for approximately 3 minutes until fluffy.

Decorating:
Using a piping bag or Ziploc bag, cut the tip of the bag with scissors, pipe frosting on cooled cupcakes. Add blue sprinkles or blue sugar.
